Baked Polenta Fries


It's been taking me a while to post due to me chopping off a chunk of my own finger and also wedding plans. Well, good news! My finger is almost all healed and the wedding is next Saturday! I'll be back in the kitchen before I know it.

Anyway...

Polenta fries are a great alternative to good 'ol potato french fries. Michael and I are huge french fry lovers and we've been looking to try something a bit different (and healthier!). I've been eyeing this polenta from Trader Joe's for sometime now and bought it on a whim.


Ok, I guess you could try making your own polenta, but this stuff is only $2 or something. When you don't have too much free time, like me, it's ok to use pre-packaged polenta (but only if it's TJ's). This recipe serves 2.

Ingredients:
1 package polenta
1-2 tbsp. olive oil
seasonings of your choice

Instructions:
- Preheat oven to 400 degrees.
- Slice up your polenta! I sliced ours pretty thing but if you prefer the creaminess of polenta, I'd recommend leaving them a bit thicker.
- Spread out on a cookie sheet.


- Drizzle in olive oil and seasonings. I added salt, pepper, oregano, parsley, and garlic powder.


- Bake for around 18-25 minutes or until nice and golden. This bake time range is fairly large because  yours could take longer depending on the thickness of your polenta fries. Ours only took about 18 minutes.
- Let your fries dry a little on a brown paper bag. The polenta plus oil leaves a bit of moisture on the outside.
- Plate and serve!


These things are AWESOME! I may actually try slicing them a little thicker next time, though.

  1. Thanks for sharing this recipe, I tried it as part of dinner tonight and it was a hit :). It will be nice to have a healthy alternative to french fries on hand.
