My Delicious Day: Lots of Cashew Cream

I had some cashews soaking overnight so naturally the first thing I did when I woke up at 6am was make cashew cream to put atop my individual key lime pies. I promise that the recipes for both the raw key lime pies and raw cashew cream will be coming up! 

In the meantime, let's look at our big breakfast after we had a pretty uneventful morning of surfing (oh yeah, did I mention that we saw killer whales last time??)...



I made tofu scramble, roasted red skin potatoes, and we ate some fresh strawberries dipped in cashew cream. SO GOOD! It was a hearty breakfast and we needed it after fighting some big and choppy waves this morning.

After sitting around, playing on Sporcle, and doing the laundry, I had a snack...


...a raw key lime pie with cashew cream. Yeah! Doesn't it look so tasty?

We decided to head to the Safari Park for the day so I roasted some almonds, walnuts, and cashews as a snack. We've decided only to eat out once a week so I wanted to make sure I packed us something that would hold us over until we were able to come home and cook a nice dinner.


We also brought along some of these that we recently discovered from Target. I highly recommend them! They had a few flavors but we thought the cherry lime looked the best. Such a good decision!


And just for fun, look at this little guy...


Ok, ok... back to the food. We came home after a HOTT (yes, with two Ts) day at the park and really needed to refuel. I made some stuffed peppers (recipe to come!) and we snacked on a few more strawberries with cashew cream.


I seriously can't get enough of the stuff. Why haven't I made this before?


And that's how I ate today! I know I didn't really eat a lunch, which is definitely not like me. For some reason I stayed fairly full all day. I only had a problem with hydration due to the 90 degree heat at the park, but I made sure to stop at every drinking fountain that I passed.

My Delicious Day: A Birthday Celebration!

This edition of My Delicious Day is brought to you by my Mom and Dad for giving birth to me. Michael and I celebrated my 24th birthday on Saturday pretty much all day long just spending time with each other. We woke up pretty early and went for a hike at Mission Trails. 




I brought along a bag of raw cashews, walnuts, pecans, and raisins. We weren't too hungry when we woke up so this was a nice snack/light breakfast for our hike.



After the hike, we arrived back at home and waited for my birthday cake to arrive. Michael had special ordered a vegan tiramisu cake (my favorite!!) through a local vegan baker, Tweets Sweets. It was supposed to be a surprise but when he found out that I had intentions of baking my own tiramisu cake, he had to ruin it. I don't blame him for telling me because I knew I would've gone and made my own. Anyway, the cake arrived and it looked DELICIOUS! We each ate a small piece then headed out the door.



I really wanted to do something for myself so I went and looked at a camera that someone was selling on Craigslist. I was able to get a Nikon D70S for $180! I am surely loving it thus far. What a great birthday present to myself!



I was pretty hungry by this point, so we stopped by our favorite bagel place and got a couple bags of day old bagels. We devoured an everything bagel each (not pictured). They really do have the best bagels! Yum.

I played around with my camera for a while and got this nice shot of our meyer lemon tree. Look at this little guy...


There are a lot of little lemons beginning to grow. I sure hope they aren't aborted!

Michael surprised me for my birthday and took me shopping! We went around to some local shops that I've been wanting to go to. He even had all of them mapped out and even knew which ones had sales! One of them had a huge sale going on and I was able to grab a couple items for only $15 total. So awesome. Ok ok... back to the food...

As we were waiting for pizza that Michael prepared to be done cooking, we snacked on some delicious fresh raspberries. Raspberries definitely don't last long here.


Look at this yummy pizza! Not sure what spices he put on there, but I know for a fact that he used Trader Joe's crust, Daiya pepper jack "cheese", and spinach. It was wonderful.


We headed off to a friend's house to celebrate his birthday. Michael snacked on some homemade hummus there (not pictured). There is nothing better on your birthday then to spend it with some friends just eating, laughing, and having a great time.

We left the party and headed to the movie theatre to see Thor. We took some of these as our movie snack...


Holy crap these are my favorite. I love when tasty treats are on sale! This makes me feel less guilty about buying them. By the way, Thor was awesome. Go see it.

We winded down with some lentil samosas and What Would You Do? on Hulu.


Such a great birthday.

My Delicious Day: Coconut Edition

I bring you all another "My Delicious Day" post! This is a coconut edition because I put coconut in almost everything! We recently got a fresh coconut and I just can't stay away from it. However, I have been feeling under the weather all day so I didn't eat very much. I did quite a bit of cooking, though. Well, at least more than I usually do when I am sick.

For breakfast I made myself earl grey tea oats. I steeped 2 tea bags in half water half almond milk and cooked my oats in that. I stirred in 1 tbsp. shredded coconut, 1 tbsp. almond meal, 1 tbsp. flaxseed meal, and 1/4 c. blueberries. This was delicious and definitely woke me up. I love earl grey tea! (While I ate these delicious oats, I updated my blog and posted some bread I made a couple of weeks ago. Check it out in the post under this one.)



In the later morning, I whipped up some carrot cake date bars. I wanted to make these so I could throw them into my lunches in the coming days. Recipe to come!


For a snack in the later morning, I had a very small bowl of soy yogurt with a bit of blackstrap molasses mixed in. I love this combination. The blackstrap molasses almost gives it a caramel flavor!


By lunchtime I was feeling pretty sick. I didn't feel like cooking myself anything so I heated up one of these Trader Joe's burritos.


These burritos are some of my favorite. We keep them on hand at all times. I usually eat one after a long day of work.


I spent the next hours contemplating on whether or not I should eat more. I have an issue with not eating when I am sick. To distract myself, I did a bit of work on my blog. I added my Amazon wish list (yay!) as well as some advertisements. I hope this doesn't distract anyone from my food!

Michael came home from work and since he wasn't really hungry for dinner I decided to make a banana-peanut butter-almond "milk" shake. Ahh this is so good! We pretty much chugged it down.


I knew all day what I was going to make for dinner -- coconut curry. This curry, however, has a bit of a twist to it. I'll be posting the recipe soon!


I am ending my night with much needed rest and relaxation. I hope I feel better tomorrow since I have to be at work at 4:30 am! We were going to go surfing today but I obviously wasn't feeling up to it. I haven't been surfing since I fractured my toe the last time so I am anxious to get out there. Maybe tomorrow?

My Delicious Day

I decided to, every once in a while, let you readers follow my day! I have friends and family across the country who always ask what I am up to. I also get a lot of "BUT WHAT DO YOU EAT?!" questions when people find out that I am vegan. This way, you all will get to know what I am up to as well as see how/what I eat! Like I mentioned in the previous post, I am trying to eat healthier. Please don't judge me if you see some junk food. I seriously get craaanky (or at least antsy) if I go too long without some sweets. Yeah, I know I have issues.

Here's how my Friday went today. Luckily I was off work so I was able to just relax and get some cooking done. We desperately need to go grocery shopping but I was able to work with what we had lying around. For breakfast I had vanilla chai oatmeal with sliced bananas. It was so good! I used strongly brewed chai tea and cooked my oats in that over the stove. I added some almond meal, flax seed meal, a tiny bit of sugar and vanilla extract, cinnamon, and ginger. I would've really liked to use some vanilla almond milk but, alas, we are out. The bananas gave the oats a nice sweetness so I guess I didn't really need the almond milk.


After my delicious breakfast, I went outside to do some repotting. My basil is getting big enough to finally have their own pot and start getting big! Can't wait to start making some pesto!


I also thinned out my spinach. I had way too many spinach plants in one pot (the terra cotta one in the photo below). It looks a bit empty now, but I am really hoping they'll take off.

There's been a pot lying around the apartment complex since before Michael and I moved in. We have had plans to take it and use it since it was abandoned and filled with dead leaves and rocky soil. I went to empty it out today and, to my surprise, found a strawberry!! The dead leaves pretty much covered the whole pot so I wasn't able to find it until I really started digging. Instead of using that pot for my herbs, I repotted and thinned out the strawberry plant (pictured below, bottom right). I am so excited about this!

I am hoping my chives and other basil babies (pictured below on the right) really get growing. If they don't it is really no big deal, especially since I've never grown herbs before. In any case, I am still proud of them and all their accomplishments thus far!

The two big trees in this photo below are our citrus trees! Michael's trees were confiscated at the border when we moved to California and he's been pretty upset since. When we moved here we decided to buy a ruby red grapefruit and a Meyer lemon tree. We bought them when they were already rather large but still treat them like our herb babies. I guess I just can't leave anyone out. I can't wait until we finally have a house with a yard to give these more room to grow (and, of course, have a MUCH bigger garden).


Anyway! After repotting and making a mess of our apartment complex, I decided to do some juicing. I ended up using 4 cucumbers, about 2 cups of spinach, 6 oranges, and 3 limes. This yielded 7 cups of juice. I was just going to make orange/lime juice like we usually do, but I picked up some cucumbers last night and thought "why not?". I am so glad I did this because I think this is my new favorite juice!


See? I just absolutely love it so much that I am practically chugging it down!


With juice, I had an early lunch. I ate leftover quinoa salad that I made a few days ago. In this salad is quinoa, chopped green peppers, spinach, and white onion, sunflower seeds, olive oil, lemon juice, a dash of salt and garlic powder. It was a nice light lunch to go along with the refreshing juice.


After eating, cleaning up the kitchen (our juicer has like 6 big parts that need to be washed. It's a pain), and throwing some chili into the crock pot for dinner, I decided to walk down the street to Balboa Park. We are very fortunate to live where we do -- we're close to pretty much all the fun stuff in San Diego! Our street dead ends into the northeast part of Balboa Park. I found a nice spot against a tree and read a little.


I am really trying not to spend too much time on the internet. I can't help but go to Yahoo and read all of the articles (um, hello, did you see Kate's wedding dress? Gorgeous.) so I am trying to keep myself distracted enough to cut back. Luckily I love to cook and bake so that's distraction enough!

I will let all of you know this now -- I eat like 4 or 5 meals a day. I can't eat a couple really large meals. My stomach just fills up way too fast. I typically eat quite a few rather small meals. Don't be surprised when I post multiple lunches or dinners, like I am now...


I made some homemade hummus while I had a Costco veggie burger in the oven. I topped my burger with pickles, hummus, and a Trader Joe's whole wheat bun. These burgers are the best.


After lunch, I just relaxed for a little while until Michael got home from work (I snuck this picture -- he had no idea that I took it until I showed him the photo).


The chili was finished cooking right as Michael got home! I didn't really taste it while it was cooking, so I figured it wouldn't really be that tasty. However, it was surprisingly great!


We finished up dinner with Takis and Trader Joe's vegan chocolate chip cookies. These cookies have been sitting in our cupboard all week waiting to be eaten! We're trying not to eat any sweets during the week so we were both excited that it's Friday just for these cookies. Also, Takis rock. Michael discovered them while living in Detroit. When we moved to San Diego, we realized they are EVERYWHERE here! We love these things so much.



We were going to end our day with tennis but unfortunately I work at 4:30 am tomorrow morning. I wish I didn't have to go to sleep so soon! Such a bummer. I will be finishing it with X-Files, so I guess I can't really complain too much. Hope you all had a fantastic Friday!
