Carrot Cake Date Bars

I love making date bars! I decided on carrot cake date bars since I had carrots at home and I wanted to incorporate some sort of vegetable in these. I did not, however, have any walnuts.

Ingredients:
1 package dates, pitted (I used a .74 lb. package)
1 c. almonds (I highly recommend splitting this 1 cup between almonds and walnuts if you have any)
1/4 c. pecans
1/4 c. shredded unsweetened coconut
1/4 c. raisins
2 carrots
1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg

Instructions:
- Using your food processor, chop up your nuts first. After you've processed them for a minute or two, add in all other ingredients.
- Once your "dough" is ready, spread into a pan using your fingertips or a wet spatula.


- Refrigerate for at least 30 minutes before cutting. Since this batch was thicker then my previous ones, I decided to cut more.


- Carefully scoop out each bar (don't worry if they fall apart -- you can easily squish them back together) and individually wrap in plastic wrap.



- Keep refrigerated until use, if you can.

These things are awesome! They're filling, delicious, and taste like carrot cake! Who doesn't love that? I'm hoping I can figure out some sort of cashew cream to top these with to resemble carrot cake even more. If I can't, it's no big deal. These are still delicious without any topping.

Well, I wish I could make another batch of date bars today (in a different flavor, of course) but I have to work from 10am - 7pm. Yuck. Good thing I have a couple bars from this last batch to keep me going!
