Chickpeas almost double in size when cooked, so I recommend starting out with a cup or two.<br /><br />- Place beans in a large bowl and cover with water at least 3 inches above beans. Let beans soak in refrigerator overnight.<br />- Once beans are done soaking, let drain. <br />- Place beans in a large pot and cover with fresh water at least 3 inches above beans. Bring beans to a boil and then turn heat down to simmer.<br />- Cook beans, stirring occasionally, about one hour.
